Ingredients:
- 1 large eggplant, peeled and sliced into 1/2-inch rounds
- 1/2 cup almond flour
- 2 tablespoons coconut flour
- 2 tablespoons nutritional yeast
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/4 teaspoon sea salt
- 2 large eggs
- 1 tablespoon olive oil
Instructions:
Warm your oven up to 400F 200C and put parchment paper on a baking sheet
Cover the baking sheet with foil and brush both sides of the eggplant rounds with olive oil
Bake them for 15 to 20 minutes, or until they're soft and a little brown
Take the eggplant out of the oven and let it cool down a bit
Almond flour, coconut flour, nutritional yeast, dried oregano, garlic powder, and sea salt should all be put into a food processor and mixed together
Pulse until nothing is left out
Put the baked eggplant rounds into the food processor and pulse a few times to mix everything together into a dough-like texture
Add the eggs to the bowl after moving the mixture there
Mix everything together well
Put a new piece of parchment paper on top of the baking sheet and press the eggplant mixture into a crust that is 1/2 inch thick
For 15 to 20 minutes, or until it's firm and a little crispy around the edges, bake the crust in the oven
Take the crust out of the oven and put on your favorite pizza toppings
Put the pizza back in the oven and bake for another 10 to 12 minutes, or until the crust is golden brown and the toppings are hot
