These Quinoa and White Bean Veggie Burgers are a delicious and nutritious meatless option. Packed with protein and flavor, they make a satisfying meal for vegetarians and veggie lovers.
Ingredients:
- 1 cup cooked quinoa
- 1 can 15 oz white beans, drained and rinsed
- 1/2 cup breadcrumbs
- 1/4 cup grated carrot
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions:
In a large bowl, mash the white beans with a fork or potato masher
Add cooked quinoa, breadcrumbs, grated carrot, chopped onion, minced garlic, chopped parsley, ground cumin, paprika, salt, and pepper to the mashed beans
Mix until well combined
Form the mixture into burger patties
You should get about 4 patties from the mixture
Heat olive oil in a skillet over medium-high heat
Cook the veggie burger patties in the skillet for about 4-5 minutes on each side, or until they are golden brown and heated through
