This slow cooker pork roast with gravy is a tasty and comforting meal that's great for busy weeknights or lazy weekends. When you cook pork slowly, it gets very tender, and the gravy makes it taste rich and savory.
Ingredients:
- 3 lb pork roast
- 1 cup chicken broth
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
- 2 tbsp cornstarch
- 2 tbsp water
Instructions:
Season pork roast with salt, pepper, thyme, and rosemary
Place sliced onions and minced garlic in the bottom of the slow cooker
Put the seasoned pork roast on top of the onions and garlic
Pour chicken broth over the pork roast
Cover and cook on low for 6-8 hours or until the pork is tender
Once cooked, remove the pork from the slow cooker and let it rest
In a small bowl, mix cornstarch and water to create a slurry
Pour the liquid from the slow cooker into a saucepan, and whisk in the cornstarch slurry
Cook the gravy on the stovetop until it thickens
Slice the pork roast and serve with the gravy
