A delicious vegan twist on classic bread pudding infused with the flavors of apple pie. Perfect for dessert or a cozy breakfast treat!
Ingredients:
- 6 cups cubed day-old bread
- 2 cups unsweetened almond milk
- 1/2 cup maple syrup
- 1/4 cup melted coconut oil
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
- 2 cups peeled and diced apples
- 1/2 cup chopped pecans optional
- 1/4 cup raisins or dried cranberries optional
Instructions:
Set the oven to 350F 175C and heat it up
Prepare a baking dish by greasing it
Almond milk, maple syrup, melted coconut oil, vanilla extract, cinnamon, nutmeg, and cloves should all be mixed together in a large bowl
Mix everything together with a whisk
Add the cubed bread to the bowl and mix it gently so that all of the bread is covered in the sauce
If you want to add pecans, raisins, or dried cranberries, along with the diced apples, do so
Spread the mixture out evenly in the baking dish that has been prepared
After the oven is hot, bake for 35 to 40 minutes, or until golden brown and set
Allow it to cool a bit before serving
