Dairy-Free Curried Spinach Soup



Enjoy this curried spinach soup that doesn't have any dairy. It's rich and creamy. The right amount of spices and coconut milk give it a smooth texture, and the spinach makes it healthier. A tasty and comforting soup for any event!

Ingredients:

  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp curry powder
  • 1/2 tsp cumin
  • 1/4 tsp turmeric
  • 6 cups fresh spinach, chopped
  • 4 cups vegetable broth
  • 1 can 14 oz coconut milk
  • Salt and pepper to taste
  • Juice of 1 lemon

Instructions:

Put olive oil in a big pot and heat it over medium-low heat

Put in the chopped onion and cook it until it turns clear

Add the curry powder, cumin, turmeric, and minced garlic and mix them in

Do this for two minutes

After you add the spinach, cook it until it wilts

Add the coconut milk and vegetable broth

Bring to a low boil

Add pepper and salt to taste

Let the flavors blend for 15 to 20 minutes while it simmers

Blend the soup until it's smooth with an immersion blender

Add a squeeze of lemon juice and stir to finish

Serve hot, and if you want, top with more spinach leaves
