Freezer Friendly Vegan Raviolis



These freezer-friendly vegan raviolis are filled with a delicious mixture of sweet potatoes and vegan ricotta cheese. Perfect for a quick and satisfying meal any time!

Ingredients:

  • 3 cups all-purpose flour
  • 3/4 cup warm water
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1 cup cooked and mashed sweet potatoes
  • 1/2 cup vegan ricotta cheese
  • 2 cloves garlic, minced
  • 1/4 teaspoon nutmeg
  • Salt and pepper to taste

Instructions:

In a large mixing bowl, combine the flour and salt

Gradually add warm water and olive oil to the flour mixture, kneading until a smooth dough forms

Cover the dough with a damp cloth and let it rest for 30 minutes

In another bowl, mix together mashed sweet potatoes, vegan ricotta cheese, minced garlic, nutmeg, salt, and pepper

Roll out the dough into thin sheets and cut into circles using a cookie cutter or glass

Place a spoonful of the sweet potato mixture onto half of the dough circles

Top with another circle of dough and press the edges to seal, using a fork to crimp the edges

Place the raviolis on a baking sheet lined with parchment paper and freeze until solid

Once frozen, transfer the raviolis to a freezer-safe bag or container for long-term storage

To cook, bring a pot of salted water to a boil and cook the frozen raviolis for 3-4 minutes, or until they float to the surface

Serve hot with your favorite vegan sauce or toppings
